Our creamy cheese is handmade with whole milk from cows that graze freely in pastures and meadows of the comarca of A Ulloa.

Its quality is guaranteed because of the cow’s feed –excellent pastures and grasses such as clover– but also because it is subject to many controls and it is made by hands full of wisdom.

The creamy cheese Arqueixal is a soft cream cheese bland in flavour, but it isn’t a standardized and globalized cheese; it takes into account the local context and the diverse palates.

Children, adults and aged can eat this cheese either as hors d'oeuvre, as dessert or as a main ingredient of a good slow food.

We recommend keeping it in cold -6º/8ºC- wrapped in a cloth so it retains its quality and so it can breathe. We also suggest removing it from the fridge at least 1 hour before serving.

   

THE CHEESE ARQUEIXAL DA NABIZA

   

This semi-hard cheese is handmade with the milk of our own herd. It is a cheese with a lot of tradition and roots in our region; produced mainly in the period of the year (October to March) we produce the vegetable that gives it its name -nabiza: turnip-.

It’s matured for 4 months. Within that time we take care of it until it becomes a new cheese with a thick skin and a similar colour to a straw harvest. It is firm in texture, slightly salty, with an excellent nuts flavour.

We widely recommend keeping this cheese in a fresh place, under 15º C or in the less cold space of the fridge. We can also let it continue maturing and the taste will sharpen during that process.

If you see mould in the skin, wash it with salt water and clean it with a dry clean cloth. We recommend eating the Nabiza cheese at room temperature, cutting it into thin slices.

   

 

The Yogurt Arqueixal

   

It contains no added ingredients so it is an organic natural yogurt made from organic cow’s milk. Its smooth and home taste creates a healthy dependence.
It is available in 400gr. and 700gr. glass recyclable bottles, so consumers have the opportunity to contribute to the preservation of the environment just by consuming this product.

The texture of the yogurt Arqueixal is not always the same but it varies depending on what our cows have eating before the milking process. Remember that our animals’ feeding varies all along the year (different grasses and cereals depending on the season) and so, the milk they give us varies too.

This heterogeneity is just a sign of guarantee for the consumer because it shows that our milk is not standardized as it happens in the industrial production, therefore its fat content is the natural fat content of the milk.

We don’t even enrich it with calcium or milk solids because we produce whole milk with more calcium than the milk produced mechanically.

The texture and presentation of our yogurt is a value and not an imperfection which certifies its quality and benefits the consumer.

   
THE MILK ARQUEIXAL
   

The pasteurized organic milk Arqueixal comes from our own cows that graze in pastures enriched with no chemical fertilizers or pesticides. Instead they graze pastures with a very diverse flora.

It is available in glass ecological bottles: the best packaging to preserve all the organoleptic features of the organic milk.
